Spaghetti Squash Spaghetti and Meatballs

And, I’m back with another #MealPrep recipe! This one is easy, voluminous and delicious!

Everyone loves pasta, especially spaghetti. I remember growing up eating it ALL the time! We hosted pasta parties every Friday night before swim meets during the summer. Gotta carb up right!

As we grow older and many of our metabolisms slow down, we often choose to go on a diet. The first thing that many of you may read is to cut out carbs! In reality, you’ve got to cut the calories. Along with cutting calories comes cutting some, yes carbs, too!

Don’t let me confuse you. Carbs are NOT bad. They are NOT the enemy. In fact, we NEED carbs. But, like I just said, sometimes if we are trying to reach goals, such as losing weight, cutting calories and/or carbs may be something you have to do.

But, who wants to give up pasta? Well you don’t exactly have to. Instead, swap the pasta noodles for spaghetti squash.

Take a look at this comparison from Dr. Oz:

One cup of cooked spaghetti made from white, enriched noodles, contains approximately 220 calories, 42 grams of carbohydrates and very few nutrients. Comparably, one cup of cooked spaghetti squash provides about 42 calories, 10 grams of carbohydrates, and a host of important nutrients such as vitamin A and potassium.

Dieting is all about volume; recreating meals that you love in a way that allows you to cut calories but not taste. Now, this meal is great whether you’re trying to cut calories or not. And, you just need 3 ingredients: turkey meatballs, spaghetti sauce and a spaghetti squash.


  • 1 spaghetti squash
  • 3 turkey meatballs
  • 1/4 cup spaghetti sauce
  • Salt & Pepper
  • Optional: Olive Oil or Olive Oil Pam Spray


  1. Pre-heat oven to 375 degrees.
  2. Carefully cut the spaghetti squash in half.
  3. Spoon out the seeds.
  4. Drizzle with 1-2 tablespoons of olive oil. If you want to cut out the oil, use the zero calorie spray.
  5. Sprinkle salt and pepper to taste.
  6. Place in oven and cook for roughly 45 minutes.
  7. Remove from oven and let cool.
  8. Use a fork to peel away the flesh of the spaghetti squash to create noodle like strands.
  9. Add sauce and meatballs, wallah!

Seriously, so E-A-S-Y!! And, delicious! Add some Parmesan cheese if you like that kind of thing!
